An easy and beautiful way to bring your grocery bill down while adding nutrient rich food to your diet is by growing what is called sweet potato slips. Simply put organic sweet potatoes in a little water and the potatoes will sprout then grow green, leafy vines. The leaves are edible and packed full nutrients! Keep them in your window sill to add to your salads, smoothies, or just to munch on! Another option is to pluck a foot long vine off of the potato, stick it in water and the vine will grow strong roots. When the weather has been in the high 70’s for at least several weeks, plant the rooted vines in your garden. The vines will go crazy!
